5:2 fast week 3

Today we decided to have a brunch instead of breakfast, so that my hubbie would be able to survive the day.  I dont know what he is complaining about he has now lost 6lbs in weight and I have only lost 2lb!!  I know it is not about the weight loss, but really not fair!

Anyway for brunch we had one slice of toast (mine was brown gluten free bread 73 cals his white bread at 97 cals) a little low calorie spread and one large poached egg (108 cals) so a nice brunch of around 200 cals in total.

This evening I have again dipped into the Hairy Bikers new book The Hairy Dieters for inspiration and we will be having cajun chicken with baby boiled potatoes (because they are so nice at the moment)and sweetcorn, with a green leaf salad.

Calories are ;chicken breast around 280grams for two small ones, no skin on obviously, so 334 cals.  Boiled potatoes 370grams at 196 cals.  We like the potatoes boiled until just able to be smashed up slightly with a fork, then a nice handful of fresh chopped chives and a little low fat spread mixed in.  The sweetcorn is only 25grams at 17cals between us.  The green leaf salad as it has no dressing we consider free calories as are the spices used in the mix for the chicken (I used dried cumin, paprika, thyme, oregano, black pepper and sea salt in the spice mix)  The chicken will be flattened out (this will ‘fool’ my hubbie into thinking he has more) and then spice mix rubbed in.  I don’t add fat to my non stick pan so intend to dry fry the chicken.

Total calories 548 divided into two, but hubbie usually has more potato and chicken so should be his 600 cal allowance for today.

Looking forward to dinner, wondering what to make for tomorrow.

Oh I also had my blood pressure taken this week as one of my regular checks.  Usually this is high, and has been for around 15 years despite medication, but it was spot on for the first time – is this proof already that things are improving health wise I wonder?

Extra special treat today – One of the last flying Vulcan bombers just few over our house as there is an Air Show in Clacton this weekend.  Really spectacular and made a really great rumbing sound of the engines 🙂
